Measuring -- Who Needs It?
For Rachael, cooking is more fun when it's not a science. She hardly ever bakes because it requries exact measurements and she prefers to "eyeball" it. But what exactly does she mean by a "palmful" or "two turns of the pan"? Check out the video above for Rach's measurement definitions.
For EVOO: "Once around the pan, it doesn't matter if you go slow or fast, I'm just trying to get enough oil to coat the bottom of the pan with an even, light layer."
For spices: "Err on the side of caution. Measure out a palmful and start there. Go a little bit shy, and never dump directly into the pot. You can always bump up from there."
For herbs: "Is there really a difference between a small handful of parsley versus a large handful? Not so much.
